Summer Fresh Greek Pasta Salad
Pasta salads are the best. They are so easy, pretty, and colorful and lots of people love them. Think of the flavors of greek salad, and toss them in pasta. This is going to be a family favorite in no time.
On a hot summer day, or any time there’s something so great about a cold pasta salad loaded with delicious ingredients. They’re so easy to make and you can add anything you like to make it amazing. And can you imagine making this in the summer with fresh vegetables right from the garden? Oh my!
It’s a meal in a bowl! Colorful, healthy, and a crowd-pleaser. That tangy, flavorful feta with the zip from the olives and vinegar. Oh my, I’m getting hungry again!
Greek bowtie pasta salad
For this recipe, I used bowtie pasta because the kids love it. It’s so cute and fun. I also used kalamata olives because, yum, they are my favorite! The chicken is cooked ahead of time and shredded. I love to get a whole chicken and make multiple meals out of it. You could do that and pull the meat off the bones for this recipe after you cut off the pieces.
Or just roast up a sheet pan full of chicken breasts with salt and pepper on them until the internal temperature is 165. Then let them cool, shred them all, and store them in 2 cup portions in the freezer for recipes like this. It’s a great way to be prepared with healthy proteins.

Greek Chicken Pasta Salad
Ingredients
For the salad:
- 2 C. Shredded chicken breasts
- 16 oz. Bowtie pasta
- 1 Pint Cherry tomatoes halved
- ½ Cucumber diced
- ¼ C. Black or green olives
- ½ C. Crumbled feta cheese
For the vinaigrette:
- Juice from half a lemon
- ½ C. Olive oil
- ¼ C. Red wine vinegar
- 1 ½ tsp. Oregano
- 2 tsp. Minced garlic
- Salt and pepper to taste
Instructions
- Cook the pasta to your liking, drain well and let cool.
- Add the pasta to a large mixing bowl with the cucumbers, tomatoes, chicken, olives and feta cheese.
- Mix together all of the ingredients for the vinaigrette in a bowl until well combined.
- Pour the vinaigrette over the pasta salad, and toss to combine well.
- Serve immediately, or chill before serving if desired.
