Organic Elderberry Syrup

Ingredients
  

  • 3 1/2 c water
  • 2/3 c dried elderberries
  • 2 T grated ginger
  • 1/2 tsp ground cloves
  • zest one orange and one lemon
  • 1 c raw honey

Instructions
 

  • Bring water,elderberries ginger, cloves and orange peel to boil in a pan.
  • Cover and simmerfor 45 minutes to 1 hour or until liquid is about ½.
  • Remove from heat and letcool until you can mash berries.
  • Pour through a strainer and discard what it catches.
  • Cool to lukewarm. BE CAREFUL to make sure it’s lukewarm. Cold syrupwon’t dissolve the honey into the mixture, but hot syrup will kill the beneficial qualities of raw honey. Make sure it’s still warm, but under 120 degrees.
  • Mix honey into syrup well.
  • Store in the fridge for up to 2 months. Take 1 tablespoon daily for immune boosting, or 1 tablespoon three times a day if you are sick. Kids can take a teaspoon a day.
