Cheesy Cauliflower Rice Risotto

- 2 bags frozen riced cauliflower
- 1 onion diced finely or grated
- 2 cloves garlic, crushed
- 2 tablespoons butter
- 2 tablespoons spicy mustard
- 8 oz cream cheese
- 1/2 c whole milk
- salt and pepper to taste
- 2 c shredded cheddar cheese
- 1 tsp red pepper flakes optional
Saute the onions and butter in the skillet for about 4-5 mintues until the onions are soft.
Add the remaining ingredients and stir over medium heat until the cauliflower thaws. Cook for about 3 minutes longer. Not too long so the cauliflower won't get too soft and mushy.
Remove from heat, mix in cheese and place in the oven at 350 for 15-20 minutes or until bubbly and cheese is melted
Serve warm.
